I would like to introduce you to my cookery classes here at Crawley Farm just outside the Medieval village of Chearsley, in the glorious surroundings of the Buckinghamshire countryside.
One of the joys of being a chef is sharing knowledge and passion with other food lovers, whether they’re aspiring chefs or food enthusiasts. I run a wide range of classes to suit any budding chef for all levels who want to cook recreationally, whether you are a bit of a foodie wanting to learn more, a group of students or children wanting to cook.
You will be sharing my intimate kitchen along side up to 6 like-minded enthusiasts, with my full undivided attention, to create several delicious dishes combining a variety of techniques including, flavour, tips on seasoning, artistry and the skills to achieve your goal. You’ll learn the secrets of running a Michelin starred kitchen, and come away feeling you’ve just spent the day socialising with friends.
Day classes may vary in length, from 4-5 hours, starting at 10am, 2.5 hours for the evening, starting at 6.15pm. Cooking classes will include dinner parties made easy, meat dishes, confidence with fish, delicious canapés, beautiful vegetables, soups and sauces, modern British food, seasonal creations, pastries and puddings etc. In addition, I can tailor your classes according to your needs.

I welcome you to my kitchen and look forward to having some gourmet fun; you’ll enjoy the experience.
On arrival, a jug of coffee or a pot of tea with croissants will be waiting for you, where I will discuss your day. You will be very much hands-on with your classmates. I will be at the helm to guide you, give demonstrations, help develop your cookery and knife skills and as well, help you advance your own recipes. The exact format will vary from class to class depending on the style of recipe we are cooking.
Collectively, we will all eat and judge the delicious dishes we have cooked, accompanied by a glass of wine in the dining room.
Ever been frustrated with a knife that doesn’t cut? Are you a keen cook and want to improve your knife skills? A crucial skill, essential for the keen cook who wants to actually get on and cook. Having good knife skills will make light work in the preparation of food you wish to present in your dishes.
In the Knife Skills Proficiency Class, you will learn about the range of knives available to you, what they should be used for and how to handle them. I will teach you the ones you really need, and believe me, you do not need many and I will show you the techniques to keep them sharp.
As you become more efficient with your food prep you will enjoy cooking and become so much more confident in the kitchen. Cooks with good knife skills are also more likely to try new dishes – and experiment in their kitchens.
With vegetables, you will learn how to chop, slice and dice and perfect your julienne, and baton skills. You will also gain experience with both meat and fish cuts.
In this Master Class I will teach you how to use a knife proficiently, prepare vegetables, joint a chicken, filet a fish and create a stir-fry, and make a juicy tomato and chicken linguine.
If you are looking to create the perfect starter with bundles of flavour, soup is the ultimate! You will learn how to master easy fresh vegetable soups, intricate French Soupe de Poisson, (without having to go to La Côte d'Azur) hearty meat broths, as well as learning the essential basics of how to make a wonderful stock and you will become proficient in the making of basic sauces and want to do more.
I will teach you how different cuts of the ingredients you use are essential to the texture of your soup or sauce, and I will explain the secret of the perfect emulsion to go with your suprême de volaille aux morilles.
In addition we will create other dishes to compliment the soups and sauces we cook.
You’ll gain invaluable experience on a range of soups such as; watercress soup, fish soup and a hearty meat broth. In addition, you will cook a chicken breast in mushroom sauce.
How to conjure up several seasonal dishes, prepared in advance, to allow you the comfort of no stress entertaining. I will conjure up a selection of fresh locally sourced (where possible) ingredients to allow us to create easy to prepare dishes with the greatest of wow factors.
The wonderful thing about seasonality is freshness, and the fresher fruits and vegetables are, the easier they are to deal with.
You will gain enviable experience on how to manage your fridge and discover what to do with all those leftovers. We will discover soups, pastas, risottos, pies, stir-fry’s and many other exciting dishes. Your knife skills will be exercised to their full potential and you will allow your imagination to run wild.
This is dinner entertaining, kid’s food, quick last minute lunches made easy. You will gain experience on cooking with herbs, spices and textures to enhance your meal. This will get your taste buds dancing.
You’ll learn to create a range of dishes such as; a stir-fry of sorts, a rich moist risotto, a wonderfully colourful couscous, hearty bean casserole, accompanied by some exciting salads. To round off, a dessert based on fresh fruits.
We all know fish is good for you, but being faced with cooking the various different varieties can be difficult. If you feel you need more fish in your diet, gain experience on how to buy your fish, I will guide and help you explore the different varieties of seafood with confidence. Together we will create a number of dishes, depending on the seasonal availability, to gain an understanding of different tastes and textures.
Crustacea plays a magnificent roll within the fish experience. We will work with a selection of shellfish, experiencing the best methods of preparation and cooking mediums.
You will learn to make a delicious fish stock and how to marinade, ceviche, poach and pan fry fish, as well as creating exciting sauces. In this class you will cook with a number of different types of fish to enable you to experience.
You’ll learn to master a range of dishes such as; a very special fish pie, pan-fried sea bass with a selection of vegetables, langoustine risotto and marinated salmon.
How often are you confused by when a piece of meat is ‘done’ and when it isn’t quite yet? I will show you the tricks and how to perfectly cook your chicken sauté, pork chop, casserole or your Sunday roast.
In this class, you will learn the art of selecting the right meat, I will guide you through the various cuts and joints, we will explore the versatility of the different meats available and the different styles of cooking.
I will teach you how to make a delicious stock. You will conquer the challenge of entertaining whilst still having the time to eat your wonderful dishes, and you will gain the experience and confidence to know when your meat is perfectly cooked.
Together we will add a few additional sides to compliment the dishes we create.
You’ll learn to create a menage of dishes such as; a slow roasted leg of lamb, boeuf bourguignon, chicken sauté with tomato and basil, escalope of pork.
Gone are the days of boring vegetables, we are very fortunate to have a variety of extraordinary products out there to choose from. The common vegetable is the ingredient, which elevates a meal; I use lots of them in my cooking, as there are a lot of natural sugars to benefit from.
Preparation, as ever, is key and practice makes perfect. We will play with roots, flowers, stems, fern, fruits combing them with various herbs and seasonings.
In this class, you will gain experience on different methods of cooking; the contrast cooking times can affect the flavours of the product. We will prepare some weird and wonderful examples of veg. what works with what, and we will cook a few meats and fish to compliment.
During the lesson, you and your colleagues will learn to create a number of veg based dishes such as; a proper French onion soup, artichoke hearts with mushroom duxelle and hollandaise sauce, memorable vegetables for the dining table, the perfect mash.
In this class you will wow your guests by learning the art of creating the most amazing canapés for your drinks party. From very ordinary ingredients to the most decadent made simple, there will be something delicious for everyone.
Here’s one for the real enthusiast with very little experience of how to cook for yourself. You will learn how to deal with pastas and risottos, a simple roast with veggies, how to cook wonderful fish with ease, together with some very simple but delicious sauces to accompany a number of combinations, a pudding will also be part of the agenda. You will leave with the confidence of how to throw a dinner party.
Simple as it may sound chicken can be, and probably is, the most delicious of all birds if cooked to perfection and served with an array of wonderful vegetables. Whether the chicken is roasted whole, dissected to be casseroled, pan-fried or poached for a pie, we will create something quite delicious. You will be amazed how versatile you can be.
With winter coming up, we will learn to prepare and create some wonderful warming and hearty dishes to keep the cold out. We will look at a number of various risotto dishes, which are truly simple, a meaty bean casserole to warm the cockles, melting Puy lentils to satisfy any hungry soul, as well as many other delicious ideas.
Delicious and deserves more respect than it is credited for, we will defy the myth of offal. You will gain knowledge on how to trim and cut, delicately blanch and fry, sauté, create wonderful pâté, as well as make yummy sauces.
A simple lemon tart is my favourite; you will discover a light crumbly pastry, filled with delicious lemon, accompanied by raspberry coulis. Decadent chocolate sauce, spiced with pepper and orange to drizzle over chocolate fondants. Madeleines baked and served with a rich vanilla sauce. A flawless white chocolate sauce to smother iced berries. You’ll be amazed how good these are.
